Water tower cake

Water tower cake, also known as “wine-smelled steamed sponge cake”, is soft, sweet and full of toughness. As a local specialty cake made by hand in Ningbo, water tower cake is fermented from rice. The milled rice slurry needs to be fermented with yeast and wine. In order to balance the fermentation, rice slurry, wine and yeast need to be mixed evenly. It is often the next day when the fermentation process is completed. Afterwards, the fermented rice slurry will be poured into a steamer and stacked layer by layer, like a tower, and that is why it is named as “water tower cake”.
